Oven-Baked Wagyu Beef Brisket

- Brush avocado oil over both sides of a raw wagyu beef brisket;
- Sprinkle Kosher salt and pepper on both sides of brisket;
- Pan sear in cast cast-iron skillet frying pan until nicely colored on all sides;
- Remove from frying pan;
- Mix 12 oz of tomato paste, 3/4 cup of soy sauce, 1 oz of Dijon mustard, 1/2 cup brown sugar and dash of paprika together in a bowl to a paste texture;
- Crush 4-5 cloves of garlic and mix with an oz. of avocado oil in a separate bowl;
- Slice 1-1/2 yellow onions;
- Place braised brisket on top of layer of raw sliced yellow onions in dutch oven or cast iron skillet;
- Spread garlic avocado mixture over top of brisket;
- Spread tomato paste mixture over the brisket;
- Add another layer of sliced onions over the top of the brisket;
- Pour half bottle of beer in skillet;
- Pour 1 cup of beef broth in skillet;
- Seal tightly with tin foil or lid and oven cook at 350° for 2.5 to 4 hours depending on weight of brisket.
