Smoked Wagyu Beef Ribs
Pre-Heat smoker to 275 F using pecan wood;
Spread liberal amount of 60% pepper and 40% Kosher salt mixture to top and sides of beef part of ribs;
Example used was 12 pounds of total bone and Wagyu rib meat combined – smoked for approx. 15 hours. Use internal thermometer and consider finished at a consistent internal heat of 185° to 190° F.
